Croatian fritaja with wild asparagus

Who has not tried fritaja with wild asparagus, has not met Istria. Asparagus, haughty queen from Istria, will remind you with its slightly bitter taste of macchia, rocks, pines, the smell of the sea and aromatic plants.

Preparation

  1. Wash the asparagus, separate the soft part off the stem with the tips and break it into smaller parts.
  2. Finely chopped onion briefly sauté in oil, add prepared asparagus, salt, pepper and sauté until the asparagus gets soft.
  3. Add stirred eggs and Vegeta, additionally stirring and bake till it is done.

Advice

You can sprinkle fritaja with grated goat or sheep cheese, as desired.

Serving

Serve immediately with home-made bread.
