Crispy gnocchi with tomatoes and mozzarella

The trio of pasta, cheese and tomatoes is one of the best combinations in cooking. Discover how to give it a new crispy note in this version with gnocchi.

Preparation

  1. Sauté while occasionally shaking the pot until the tomatoes are softened and the liquid is thickened (about 4 – 6 minutes). Crush tomatoes with a wooden spoon to speed up the process! Add in toasted gnocchi and basil, stir and transfer to a baking dish.

  2. Melt butter in a pan, add finely chopped garlic, chilli and salt, Vegeta Fine blend and black pepper. Lower heat, add in tomatoes and 3 tablespoons water.

  3. Lay mozzarella slices on top and drizzle with a little olive oil. Bake until the cheese is melted and golden (2 – 4 minutes).

  4. In a large pan, heat olive oil and add half the gnocchi. Cover and fry until golden on one side (2 – 4 minutes. Remove gnocchi to a bowl, and repeat with the other half of the gnocchi and olive oil.

  5. Lower the baking rack to the lowest level. Heat oven to the highest temperature.

Advice

Instead of cherry tomatoes, you can use Chopped tomatoes with basil and oregano.
