Bruschetta with pea spread

It is highly likely that this dish, starring peas in the main role, will quickly become a favourite, even if peas are not your first choice, because in combination with select ingredients, they become the perfect spread for a slice of bread or on bruschetta.

Preparation

  1. Spread pea mixture onto toasted bread slices, and top with soft-boiled egg.

  2. In an electric blender, add drained peas, parsley, chives, chopped garlic, lemon zest and 1 tablespoon lemon juice, ricotta, Vegeta Spirulina, freshly ground black pepper, and olive oil. Blend until smooth.

  3. Place egg in boiling salted water and cook for 5 minutes. Remove from heat and place in an ice water bath.

Advice

Open tin of peas just a little to drain the liquid, then open all the way.
