Dill enhances the aroma of food, stimulates the metabolism, and improves the appetite. It has a slightly bitter, though fresh and sweet aromatic flavour. In seasoning cold dishes, it is a common ingredient in vinaigrettes, mayonnaise based sauces or yogurt dressings. It is a mandatory addition to pickled vegetables, especially pickled cucumbers. In addition to being highly decorative, dill leaves give a freshness to food, particularly homemade breads, or when served with vegetables or soups, such as carrot soup or tomato soup, or with a hearty, homemade minestrone.
Preparation
Use dill with fresh cheese and cream, curd, omelets, seafood, salmon, cold soups, potato salad and cucumbers.
