A typical Mediterranean snack is dipping warm bread into olive oil containing some chopped rosemary leaves. Rosemary is the main decoration of focaccia, an Italian flatbread, and can be added into the dough for milk bread. Rosemary is a perfect seasoning for roasted meats, particularly chicken, lamb and fish, giving a rounded flavour. It also enhances the aroma of vegetables such as tomatoes, pumpkin, potatoes, eggplant, peas and legumes, and mushrooms. Roasted potatoes, alone or in combination with other root vegetables, can be a stand-alone meal or a fantastic side dish.
