Zucchini Crust Pizza

Preparation
- Preheat oven
– Heat your oven to 200°C (400°F) and line a baking tray with baking paper. - Prepare the zucchini crust
– Grate the zucchini and squeeze out as much liquid as possible using a clean tea towel or paper towel.
– In a bowl, combine grated zucchini, eggs, flour, Vegeta seasoning, half of the mozzarella, and the parmesan. Mix well.
– Spread the mixture onto the prepared tray, forming a thin, even circle or rectangle about 1 cm thick.
– Bake for 20–25 minutes, or until the crust is firm and lightly golden. - Make pizza sauce
– While the crust bakes, heat olive oil in a small pan over medium heat.
– Sauté onion and red pepper for 3–4 minutes until softened.
– Add diced tomato, oregano, salt, and pepper. Simmer for about 5 minutes, stirring occasionally, until the sauce thickens. - Assemble the pizza
– Remove the crust from the oven and spread the tomato sauce evenly over the top.
– Sprinkle with the remaining mozzarella. - Final bake
– Return to the oven for another 10–12 minutes, or until the cheese is melted and bubbly.
– Allow to cool for a couple of minutes before slicing. Enjoy!
