Preparation

  1. Preheat the oven to 220 °C.
  2. Line a baking sheet with parchment paper. Wash and halve Tomatoes.
  3. Arrange the tomatoes you have taken out in one layer on a baking sheet. Roughly cut garlic cloves and spread them over the tomatoes, sprinkle with thyme and drizzle 1 tablespoon of oil.
  4. Sprinkle with Black Pepper. Put in the preheated oven and bake until softened, wrinkled and slightly caramelized. This will take between 15 – 20 minutes
  5. Meanwhile, heat 1 tablespoon of oil in a large pot on a medium heat, add finely chopped onion and fry until transparent and tender.
  6. In 500mL of boiling water add in 1 Vegetable Stock Pot
  7. Add tomato concentrate and simmer until the paste gets a stronger colour and the onions are coated with it. Remove from heat and transfer the baked tomatoes, garlic and thyme to the pan carefully, add the prepared stock then bring back onto the heat
  8. Bring to a medium – high heat and stir to a boil.
  9. Reduce to a low heat to simmer, cover and cook for 20 minutes.
  10. Once complete, use a hand blender and blend until smooth.
