Preparation

  1. Preheat the oven to the highest temperature and place the grate in the upper third of the oven.
  2. In a medium bowl, whisk all eggs until well combined
  3. Heat the olive oil on a medium heat and a stainless-steel pan suitable for the oven, then add garlic and half the amount of onions and simmer. Cook until garlic is fragrant, and onions are translucent.
  4. Add the rest of the vegetables, stirring occasionally, until it releases most of the liquid.
  5. Sprinkle with Vegeta and pepper to taste. Add eggs and quickly mix them with vegetables to spread evenly. Bake until the underside is tight, about 1 minute.
  6. Put the remaining onions and cheese on top. Transfer to the oven and bake until browned, about 4 minutes.
  7. Sprinkle everything with chopped parsley, serve and enjoy!
