- Preheat the oven to the highest temperature and place the grate in the upper third of the oven.
- In a medium bowl, whisk all eggs until well combined
- Heat the olive oil on a medium heat and a stainless-steel pan suitable for the oven, then add garlic and half the amount of onions and simmer. Cook until garlic is fragrant, and onions are translucent.
- Add the rest of the vegetables, stirring occasionally, until it releases most of the liquid.
- Sprinkle with Vegeta and pepper to taste. Add eggs and quickly mix them with vegetables to spread evenly. Bake until the underside is tight, about 1 minute.
- Put the remaining onions and cheese on top. Transfer to the oven and bake until browned, about 4 minutes.
- Sprinkle everything with chopped parsley, serve and enjoy!
