Preparation

  1. Heat the oil in a large pot. Add the diced meat and onions, and sauté until the meat is browned and the onions are softened. Stir in the garlic.
  2. Season with Vegeta, paprika, cayenne, black pepper, and bay leaves. Pour in just enough water to cover the meat, then bring to a gentle simmer.
  3. Cook slowly over low heat for about 1 hour, until the meat is half-tender and the liquid has reduced by roughly one-third. Stir occasionally and top up with a little water if needed.
  4. Add the passata and white wine, then continue cooking for another 30 minutes, or until the meat is completely tender and the stew has developed a rich, thick sauce.
  5. Taste and adjust the salt before serving.
