- Heat the oil in a large pot. Add the diced meat and onions, and sauté until the meat is browned and the onions are softened. Stir in the garlic.
- Season with Vegeta, paprika, cayenne, black pepper, and bay leaves. Pour in just enough water to cover the meat, then bring to a gentle simmer.
- Cook slowly over low heat for about 1 hour, until the meat is half-tender and the liquid has reduced by roughly one-third. Stir occasionally and top up with a little water if needed.
- Add the passata and white wine, then continue cooking for another 30 minutes, or until the meat is completely tender and the stew has developed a rich, thick sauce.
- Taste and adjust the salt before serving.
