Preparation

  1. Melt 2 tablespoons of butter in a pan and sauté onions and capsicum until softened. Remove from pan and place to the side.
  2. In a second pan or small pot, mix together chicken, bbq sauce, lime juice & Vegeta. heat over low heat, stirring occasionally.
  3. Lightly baste one side of a tortilla with butter, then place buttered side down in a large pan over medium high heat. quickly add cheese, BBQ chicken, capsicum and onions on half of the tortilla.
  4. Fold the other half over. fry until bottom is golden, then carefully turn over.
  5. Fry until the other side is golden, then remove from the pan. repeat to make 8
